Alright, i'm not an avid wikier so here it goes:
The game sometimes seems to have issues saving the settings and by defaults starts with everything set to the lowest, including the resolution.
These settings are supossed to be saved into the registery, wich the game can't do unless it's given admin rights, if for some reason you can't give the game admin rights you can change these settings via the registery on the key HKEY_LOCAL_MACHINE\SOFTWARE\Wow6432Node\Electronic Arts\Need for Speed ProStreet

So I've found a fix for the Logitech G29's force feedback for ProStreet, I don't know if it'll work for everyone but all you have to do is install Logitech's gaming software (and probably restart). You can find it at Logitech's support website and download the latest version.
